As with other spices, we much prefer the aroma of the star anis CO2 extraction to that of the essential oil. As expected, it’s more faithful to the aroma of the familiar spice, rounder, softer, and with the characteristic anisic and liquorice notes of this spice. However, it is extremely potent! A little goes a long way.
