Gamma-Undecalactone is commonly know as aldehyde C-14, but it’s not an aldehyde!

This molecule has a rich, fruity and creamy aroma reminiscent of peaches. It’s widely used in fruity, floral and gourmand accords, and to add a smooth, luscious quality and lasting depth to fragrances. It can also work well with woody and green notes. It must be used with a lot of restrain though, this is a very potent material that easily overwhelms perfume compositions.
